I’m still drooling over the incredible dinner at Mandy’s the other night… Crockpot carnitas (finished under the broiler), cilantro cauli rice, avo-tomatillo salsa, toasted pepitas + house-pickled carrots. (My contributions were much less exciting: water, lettuce, chocolate.)
Time for these folks to open their own taqueria.
This was a real testiment (and inspiration) to how satisfying and wholesome a paleo diet can be. Tomorrow night E + I are making paleo jambalya with Cajun cauli rice… Happy Mardi Gras, y’all!
