A certain photographer in my life has reinspired to get back into food photography, and lo and behold, my Nikon is working again!
Post-spin lunch today: Tofu and Kale
Bloom spices (I used curry, tumeric, cinnamon, giner and crush red pepper) in olive oil for a minute or two, throw in the tofu and break it up, then add your greens. We have a bunch of kale from our CSA this week, so that’s what I used. Add some sunflower seeds for crunch and dried cranberries for color and sweetness and you’re all set with a five minute lunch. Could not be easier.

My apologies for the limited postings lately. Usually when I’m not posting it means I’m losing control and gaining a bunch of weight… but alas, I think I’ve figured out how to be busy, social and preoccupied while NOT packing on the pounds. Don’t get my wrong, I’m certainly not losing weight at this point, but merely maintaining. And I could not be more pleased about it. Even to my own amazement, I was back down a couple pounds this week!
On Sunday night I paid homage to my good pal Mandy, who is still trekking up the Appalachian Trail, by making her famous pizza dough recipe.
And on Friday night I made a new favorite appetizer that you should all make for your next potluck. Mushroom-Walnut Pate!
Here is the recipe I followed. I only used half the butter, though, and added some white wine for cooking moisture. The roasted garlic adds such a deep rich flavor, and I’m sure to make that my next go-to-all-the-time ingredient. It’s easy, cheap and off-the-hook tasty.
Up one pound.
Workout today: 30 minute elliptical + BodyPump class *I went up in weight for triceps and biceps!*
I’m a little embarrassed to admit how indulgent the past weekend was. Dim sum and sushi all in the same day! Yeah, Sunday was not one of my healthiest moments. My goal for this weekend: NO EATING OUT. And no breaks from the gym.

So yeah, no eating out this weekend. Our CSA shipment came in with lots of kale, lettuce, turnips and eggs. Time to create some healthy treats!
