Choir was canceled tonight (concert is still on for Sunday, though!), so I spent much of my gym time this evening strategizing a creative dinner recipe. This was a really good one. You should make it.
Note: I used the Shirataki noodles (for their low cal/carb content), but the real deal would be that much better.
Step 1: Saute part of an onion with some chopped leftover thick cut bacon ends (remove excess fat before frying), add noodles once onions are soft, add chopped fresh dill, salt, pepper, and grated Parmesan until everything smells crazy good.
Step 2: Fry two eggs, sunnyside up, do not let yolks cook through. Place on top of Step One.
Step 3: Break yolks, stir to create sauce, add more chopped dill and hot sauce!
(Way too excited to eat to pay much attention to photographic details. Sorry about that.)
Sometimes a girl just needs bacon and eggs for dinner, right? ENJOY!!
