What could possibly make caramelized onions, roasted tofu, cauliflower and mushrooms more hippy? Serving it on spinach, that’s what. During this evening’s spin class, I fantasized about the details of this dinner. And in my dreams, I saw myself eating it atop brown rice or quinoa or shirataki noodles. And then I realized how dull and lifeless that dish would look, so let’s thank the spinach for the beautiful splash of green here.
(Don’t hate me, but I currently am not sure where my good camera is… in the pits of my car, perhaps? Let’s hope. For now, phone pics will have to do.)
Caramelized onions on spinach:
I didn’t really follow a recipe for this… Just toss the roastables in olive oil and salt and pepper (or whatever spices you have… I used paprika, red pepper, oregano, truffle salt and some other randoms) and bake at 450 for about 25 or 30 minutes, stirring two or three times. It was so easy and really a perfect and healthy meal for a solo diner.
