My spirits were in need of repair, so I pretended that it wasn’t 80 degrees here today, made some pumpkin soup, and took it over to Missy’s for an impromptu harvest dinner party. Happy again!
Pumpkin Curry Soup
Start with one 6 lb pound pumpkin, sectioned and baked until tender. That’s a lot of pumpkin…
Chop and saute 2-3 small onions:
Add a bunch of chopped garlic (5-6 cloves) and ginger (1-2 tablespoons) and a palmful of curry (more than you think you should).
Saute until fragrant and start adding some broth to soften everything up.
Start adding pieces of pumpkin:
Add more broth, one can of light coconut milk and some agave or honey (to take the edge off). Then puree with an immersion blender.
