Corn, Tomato, Basil, Balsamic, Garlic, Olive Oil, S+P

Those seven ingredients made a super easy and tasty salad for the Sohlman’s housewarming party today.

Saute the kernels of five years of corn with garlic, olive oil and salt and pepper.

Pick basil.

Mix: Chopped basil and about five chopped tomatoes and add (cooled) sauteed corn.

Dress with olive oil, balsamic, S+P.

Workout today: 40 minute spin at the gym. And now I’m about to walk up Tabor…

  1. update: i made the sauteed corn bit, but with onions and the rest, then tossed it over a bed of greens with bv and evoo, avacad, tomatoes and left out the cheese for once. uhmazing. couldn’t love you more.

  2. And here I am sitting here thinking “I have corn, fresh basil, and a tomato that need to get eaten ASAP, what the heck do I do with them? I’ll bet someone on the internet knows.” And you do! I can’t wait to make this tonight.
