Cinco de Mayo

WW update: Lost 2/10 of a pound. I’ll take it! I think the Vancouver calories have come and go, finally!

Prepping for a feast at Tre and Bronwyn’s tonight… check out my first attempt at jicama salad:

Whole jicama:

Pre mix-up:

Post mix-up:

Whole jicama, peeled, chopped in strips
Red pepper chopped
Medium red onion chopped
2 large carrots, peeled, chopped
Small handful of cilantro, chopped
Jalapeno, seeded, chopped
Juice of two limes
Can of black beans, drained
Salt and pepper

Mix it! Eat it!

No workout today… this bod needs a break.

Ok, there’s a rumor going around of chile rellenos, guac and beans for the party tonight. Get me there now!
