Get it, Mandy!

Happy 28th Birthday (yesterday) to our best friend, Mandy Bland. You are an amazing woman, inspiring all of us to be our best and truest selves. The kindness you show to those around you is infectious, and I do believe the universe will reward you for that. Welcome to 28! The best really is yet to come; I promise.


And with that, here is some food stuff from her Purple and Teal birthday party… you know we feasted, right? Truffle butter on homemade bread, eggplant lasagna, BBQ chicken pizza, an assortment of cheese, homemade hummus, pinwheels, cupcakes, chanterelle mushroom jasmine rice, champagne cocktails, and the list goes on……

The birthday cake her mom actually sent through the mail. LOVE this:

Amanda’s Eggplant Lasagna, revised

3 large eggplant, sliced an inch thick the long way
2 jars roasted red pepper
jar of tomato sauce
Isa’s “ricotta” (mix together until smooth: 1 lb. pressed tofu, handful chopped basil, 2 TBSP lemon juice, 2 minced garllic cloves, 1/4 C nutritional yeast

Roast salted eggplant slices at 350 for 15 minutes, flip and roast five more minutes
Layer eggplant, red peppers, ricotta
Cover with tomato sauce
Top with mozz

Bake at 350 until the cheese is golden.
