Solo brunch

Perfect morning: Long, hilly dog walk and a healthy brunch. Before I head to work, I need to hook y’all up with this fresh and easy meal.

Take any green veggies you have and chop them up with a little onion (I used zucchini, brussel sprouts, and kale). Stir-fry the greens with some olive oil, salt, pepper, spicy mustard, and veggie broth until soft. I added half of last night’s sweet potato and sauteed a few more minutes and then stirred in a scramble egg and egg white.

A big bowl of food for 6 WW points…
