Weigh-in Wednesday on Thursday

I wasn’t super excited yesterday to post that I’d gone up a pound. But not facing the music doesn’t do my figure any favors, so here it is. I gained a pound. Wah wah wah. Perhaps it was all that Bodypumping making mucho muscles? Or maybe (most likely) it was the wine I drank three (four?) days in a row…. Regardless, I’ve been living well and feeling strong while maintaining a respectable amount of composure in the food department. And speaking of food, it’s been pretty great lately. Both the eating out and eating in have been colorful and flavorful and relatively healthy.

Get the delicious recipe, stat! My main squeeze has been testing out vegetarian concoctions lately, much to my adoration. We don’t need bacon on EVERYTHING, do we?

Update on Weigh-in Wednesday: I stayed the same! Can I just tell you how much I LOVE maintaining in the 170’s?! I know it’s not my target weight, but I’ve completely done this without fad dieting or deprivation or guilt. Ideally I’ll spend the rest of the Spring working my way towards the 160’s, with a goal of 165 by harvest time.

And with THAT said, it’s birthday week, people! I’m one of those crazies who truly loves birthdays. What’s not to love? We get this yearly reminder that says “Hey, you’re still alive, don’t forget to live.” And you know me, I jump on any chance to celebrate (can we incorporate champagne into this?)… So yeah, I’m talking pie, pizza, risotto, chocolate mousse, tacos, wine, cake, happy hours and brunches with mimosas. A charmed life, indeed. Have a look at the peeps and some of the eats…

homestyle takeout

I’ve had these Chinese takeout boxes in the pantry since my last Dinner Club, so I filled them with a new recipe yesterday. Perfectly portable to take to Eli’s for dinner! This was my first time cooking with soba noodles, and now I’m totally sold. They’re lower calorie than most noodles and higher protein.

Cooking Light’s Peanut Chicken Soba Salad

*I made a few adjustments– I swapped the basil for a lot of cilantro. And I skipped the chopped nuts but stirred a tablespoon of peanut butter into the dressing. And then I added water chestnuts because they’re my favorite crunchy treat in Chinese food.*

We split the recipe into two servings, and Eli’s portion didn’t quite fill him up. Half was perfect for me though… Overall, this would make three reasonable lunches for a lady-style appetite. Make it, gals!
